We're looking for a Production Manager who genuinely understands gelato — not just frozen desserts in general, but the science and craft behind it.

The Role

You'll own the day-to-day running of our central kitchen: production planning, output quality, team supervision, and compliance with MUIS halal and HACCP standards. You'll work closely with the founders on new product development and continuous process improvement.

What You'll Do

  • Plan and execute daily production and delivery schedules
  • Operate and maintain pasteurisers, batch freezers, blast freezers, and ancillary equipment (Carpigiani or equivalent)
  • Supervise and train a small production team; enforce SOPs, hygiene, and PPE standards
  • Maintain MUIS halal compliance, HACCP records, and cold chain integrity
  • Manage raw material inventory, FIFO discipline, and wastage tracking
  • Troubleshoot batch issues
  • Collaborate with R&D on new flavour development and reformulation
  • Liaise with QA, logistics, and the wholesale team to meet delivery commitments

You Must Have

  • Hands-on gelato production experience (minimum 2 years) — this is non-negotiable; we are not looking for general F&B or bakery backgrounds
  • Working knowledge of gelato formulation: balancing sugars (POD), solids (PAC), fats, MSNF, and stabiliser/emulsifier systems
  • Experience operating Carpigiani, Bravo, or equivalent pasteurisers and batch freezers
  • Solid grasp of food safety: HACCP, allergen control, cold chain
  • Familiarity with halal production protocols (or willingness to train and certify)
  • Ability to read recipes in metric weights and execute precise batch calculations
  • Comfortable working in cold environments and on your feet
  • Reliable, organised, and able to manage a small team without micromanagement from above

Nice to Have

  • F&B production background
  • Experience with sorbet, vegan, high-protein, low-sugar, formulations
  • Prior MUIS-certified kitchen experience
  • Basic Excel / inventory system literacy
  • A genuine love for the craft (you tinker with recipes for fun)
